Day of baking

I just made gluten-free dairy-free peanut butter cookies and yum, they are good. All I did was to use oat flour and vegan butter, then I followed the recipe. I also made greek goddess dressing, 20 calories in 2 tablespoons and it is not bad at all. The dressing has tofu not something I have ever brought into this house. I did not have any tahini, I am thinking it will taste even better once I add that. I made the dressing to put on a salad that is chopped cabbage, carrots and sunflower seeds. Now onto the dairy-free chocolate mousse, made with coconut oil.

I am finding that the only item cut from my diet that I am missing is cheese and there is NO alternative for that. I am thinking that in 3 weeks that is the one item that I will add back. Andrew also misses it as well and he also has an allergy to it. Exercise was easy today, I went walking with the boys and my mom this morning, having company always makes things easier.
